Bikini Recipe

Yields 10 guests

To make the Clementine Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Method

Making the Syrup: Combine the listed ingredients into a pot, bring to a gentle boil, mixing until the sugar dissolves. After that, take off the stove and leave to cool down completely. Pour into an sealable bottle, seal keeping it chilled, where it will keep for up to one month.

To make Premix: Pour all the liquid ingredients into a big jug, leave to sit for 60 minutes, then strain preferably using a fine cloth, to ensure it's completely strained.

When ready to serve: Pour 85ml from the premix into a stirring glass containing ice, gently stirring lightly for about 60 seconds to cool it down. Strain to a cold coupe glass or similar, top with some cranberries and finish using a brief mist of mandarin oil over the drink.
